I am interested in buying Google One. the VPN is the main factor. Anyone knows if it works on chromebooks? we got 2 at home and use them a lot while travelling.

VPN by Google One can work on Chromebooks, I use it on my Chromebook. Just by this VPN you can’t change location like in other VPNs. In my case it’s only useful in public wifi, because can provide better protection
Yes. You download the android app to install it.
Although in my experience it’s a bit unreliable, has trouble reconnecting when I open the Chromebook for example - but that could be just my setup
