Say for instance I download the ProtonVPN APK from this website:

https://protonapps.com/protonvpn-android (which leads to the apk download link here: https://github.com/ProtonVPN/android-app/releases)

will the app update automatically? I have Google PlayStore on my phone but I would prefer not to use it. Thanks!

No, the standalone APK doesn’t update automatically.

What you can do, if you don’t want to use the Google Play store is to use F-Droid: You can download Proton VPN from F-Droid instead of Google | Proton VPN
